Grieving Lost Dreams 🌹

Have you ever had one of those weeks… or maybe even months… where you feel like you’re grieving, but you’re not fully sure what you’re grieving about? I realized my grief was about lost dreams. You know… we all carry these pictures in our heads of how we think life is going to look. The things we thought we would have by now. The people we thought would still be beside us. The moments we were sure would happen one day. But then time passes… and some of those dreams never get fulfilled the way we imagined they would. Some of those dreams have truly passed on… and honestly, that hurts. The strange thing is, you think you’ve let them go. You think you’ve made peace with them. But then out of nowhere, they pop back up unexpectedly… and you realize the ache is still there. I think sometimes we grieve the life we thought we would have by a certain age. When Cooking Is Your Love Language

Come, come sit with me… grab yourself a drink and pull up a chair.

Can I just tell you… I have been peopling and cooking for the whole month of April πŸ˜‚

And girl… A LOT of peopling.

Between birthdays, dinners, work, life, and trying to figure out what day it even is half the time… your girl has been in the kitchen.

Anyway… I did a birthday dinner that I’ll write about in another blog.

But this weekend?

I made a meal that was so good — and honestly? A total game changer for me.

The funny thing is… I had to pivot on the spot.

I originally thought my friend liked salmon, but then I found out it wasn’t really her favourite.

And listen… when I make a meal for someone, I want it to feel comforting. I want it to feel like them.

So immediately I switched gears πŸ˜‚

Chicken it was.

I had been out grocery shopping earlier and picked up different meats — salmon, ground beef, pork, and chicken.

Listen… I like to be prepared πŸ˜„

Okay, so onto the meal.

I wanted something quick to prepare and easy to make because … I am ALL about easy meals lately.

The plan?

Chicken thighs in garlic parmesan sauce.

This is the sauce I used — Garlic Parmesan Sauce

I had been seeing this sauce all over Facebook, so I finally said okay… let’s try it.

Hun hun…

THIS was the game changer.

The flavor?

So good.

I let the chicken marinate in the sauce for about two hours so it could really soak everything in, and honestly? Totally worth it.

I also used these pans because they made cooking everything so much easier — I could keep all the food separate while still cooking it together:

And you already know we needed sides πŸ˜„

I made roasted potatoes and roasted broccoli to go with it, and the whole meal ended up feeling easy, cozy, and honestly way more impressive than the effort it took.

The whole meal was ready within about an hour because of course… I like to time everything πŸ˜‚

And let’s not forget dessert.

Banana bread.

Banana bread that I had baking while we were eating dinner, so we could have a piece once it came out of the oven πŸ˜„

I mean… I did let it cool for about 20 minutes…

HA HA HA

Because apparently I don’t know how to cook small anymore πŸ˜„

You know how people talk about the five love languages?

Well… one of mine has always been acts of service.

Cooking is absolutely one of my acts of service.

Cooking is my happy place.

I love doing it, but again… I love seeing how people enjoy the food.

The look they get when they take the first bite, and especially if they go back for seconds πŸ˜„

Because you know and I know…

it was GOOD.

I get that some of you may not like to cook, and that’s okay πŸ˜„

But there are so many other ways to let the people in your life know you love them.

It doesn’t have to be big.

Sometimes it’s the smallest things that mean the most — checking in on someone, making them laugh, sitting and listening, or simply letting them know you were thinking about them.

This is just one of my ways.
